Baby Baked Oatmeal

I have to add in a mommy moment with this next recipe! I'm even going to brag a little bit! I made this entire recipe with a baby on my hip!
Yes one-handed!
I even cracked the egg with only one hand! It is amazing the things you learn to do while holding a child...dishes, laundry, cooking...you name it, I do it with one hand these days!! Being a mom on the go, you just adapt & quickly! I was hungry & she was ornery...only wanting mommy! So here it is, this delicious baked oatmeal that I'm addicted to & always eating WAY more than my belly can hold! You can use any berry in this in place of the blackberries & I have tried pretty much ever kind including kiwis with strawberries which was really yummy!!! Also blueberries are amazing! I also want to try a mix berry one next time! But for today I had blackberries in the fridge so that is what I used! I hope you enjoy this one as much as me...& the baby!!!!
 
 
Baby Baked Oatmeal


First add 2 1/2 cups of old-fashioned oats (not the instant kind) to your mixing bowl. Next comes the spices! I never really measure them out but just add quite a bit of cinnamon (I like it ALOT) then a few shakes of ginger & nutmeg + just a pinch of cloves & salt. Next add sugar. I don't like a lot of sugar, especially since the baby is going to be eating it! I added 1/2 of 1/4 cup, but depending on your sweet tooth you could add the full 1/4 cup or even 1/3 cup. Add 1 teaspoon baking powder & mix it all up!
 
 
 

In a separate bowl whisk together 1 egg, 2 cups milk, & 3 tablespoons melted butter or margarine.


Slice up those yummy bananas...I used 2 but later wished I would have used 3!
Put them on the bottom of a greased casserole dish. Add some of the fruit of your choice then pour the oatmeal mixture over the fruit.
 
 

Last pour the egg mixture over the entire thing & top with more fruit!!!

In a preheated 375 degree oven, bake for 35 to 40 mintues.
 
 
 
 

Then dish it up! I like to put milk over mine or you could eat it on a plate with some extra fresh fruit or cream...BOTH would be even better!


I love this oatmeal casserole because I made it for dinner then had enough to have breakfast for the next 2 days!

The baby devoured this too & I feel like it is a healthy meal for her! She LOVED the blackberries & had them ALL over her & her highchair! Both of us just couldn't get enough!
